Cook the lentils

Made by cooking red lentils with fine bulgur and kneading them with plenty of onion and spice, lentil köfte is a meatless, fibre-rich patty loved as both a family staple and a party appetiser. It is hand-shaped and served wrapped in lettuce leaves.
Simmer the red lentils in 2.5 cups of water for 15 minutes until soft.
Sprinkle the fine bulgur over the boiling lentils, turn off the heat, cover and let it steam for 10 minutes.
Sauté the onion in olive oil until pink, then add the tomato paste, pepper flakes and cumin; cook 5 more minutes and stir into the steamed lentil-bulgur mixture.
Once the mixture has cooled slightly, add the spring onion, parsley and lemon juice and knead well; shape into patties by hand and serve wrapped in lettuce leaves.
Knead the mixture while it is still warm; once it cools it loses its oil and starts to fall apart. Allergens: contains gluten (fine bulgur).
