A winter favourite of Jordanian cooking, lentil rishta cooks homemade noodle strips together with green lentils in the same pressure cooker. Easily carried in a thermos for a picnic basket, this dish makes a hearty mid-day meal.

Wrap the dough and let it rest for 20 minutes.
Roll out the rested dough thinly and cut it into finger-width strips.
In the pressure cooker, sauté the onion and garlic in the olive oil, then add the green lentil and cumin and cook a few minutes more.
Pour in the water and salt, seal the pressure cooker lid, and cook under pressure over low heat for 15 minutes.
Release the pressure and open the lid, add the noodle strips and cook uncovered over medium heat for another 8 minutes, until softened.
Rolling out the dough before it rests will make it shrink back, so the strips won't come out even. The noodles must be added with the pressure cooker lid off, otherwise they clump together. Allergens: contains wheat (gluten), egg.
Using red lentils instead of green gives a thicker consistency and a quicker cooking time.
