A beloved breakfast sauté from Southeastern Anatolia, made by sautéing red lentils with onion and spices and cracking egg on top. A hearty and economical recipe made with few ingredients.
Boil the red lentils in plenty of water until soft, then drain.
Sauté the onion in butter until it turns pink, then add the red pepper paste and cook for a few more minutes.
Add the drained lentils to the pan and sauté together with cumin and red pepper flakes for a few minutes, then add salt.
Crack the eggs over the sauté and cook over low heat, stirring, until they reach your desired consistency.
Important: Boil the lentils in advance and drain them, otherwise the sauté will turn watery. After cracking the eggs, cook over low heat; take them off early if you want the yolk to stay runny. Allergen: contains egg.
Adding a pinch of red pepper flakes and mint to the sauté brings out the flavor typical of Southeastern cuisine; you can serve it with fine bulgur pilaf on the side.
