Leftover bits of apple, pear and peach piling up in the fridge are cubed and simmered slowly with sugar into one large jar of jam. Since the fruit mix varies each time, the flavour comes out a little different every time, and the batch is sized for a big table.

How to make it?

Prepare the Fruit

Cube the leftover fruit and combine with the sugar and lemon juice in a wide pot.

Let It Sit

15 min

Let the mixture sit for 15 minutes so the fruit releases its juices.

Simmer Slowly

25 min

Simmer over low heat, stirring often, for 25 minutes until thickened.

Jar the Jam

5 min

Fill sterile jars with the hot jam and cool them upside down.

Reminder

Since different fruits soften at different rates, adding firmer ones like apple a few minutes before the rest keeps the cooking even. To check the set, drop a little jam onto a cold plate.

If your fruit mix includes banana, being very soft, add it in the last 5 minutes of cooking to keep it from turning to mush.

Meyve karışımını 25 dakika yerine 20 dakikada kıvama getirdim, tarifte yazan süreden kısa sürdü; meyvelerin olgunluğuna göre süre değişir mi? Şeftalinin tatlılığı elmayla çok iyi dengelendi.
