Mielie pap is a simple South African porridge that children love, made by stirring coarsely ground maize meal into water and cooking it quickly over the stove. Sprinkling the maize meal in slowly right as the water boils is what keeps the porridge smooth instead of lumpy. Because it's made with water instead of milk, it can be eaten warm both at breakfast and as a late-night snack.
