A small bite from Greek tables suited to a crowded table, this pastry is made by wrapping spinach and a light cheese filling in whole-grain filo and baking it crisp. With no added sugar in the filling, it makes a diabetic-friendly snack.

How to make it?

Prepare the filling

Mix the squeezed spinach with the crumbled cheese, egg, dill and black pepper.

Cut the filo into strips

Cut the filo sheets into long strips and brush each one with olive oil.

Wrap into balls

10 min

Place a teaspoon of filling at the end of each strip, roll tightly and shape into a small ball.

Bake

15 min

Bake in an oven preheated to 190°C for 15 minutes until golden.

Reminder

Keep the filo sheets you're not using covered with a damp cloth; exposed sheets dry out and crack quickly. Allergens: contains wheat (gluten), milk and dairy (cheese).

If you don't squeeze the spinach thoroughly dry before adding it to the filling, the filo will turn soggy as it bakes.

Beyaz peynir yerine az yağlı lor peyniriyle yaptım, tuz miktarını biraz artırdım çünkü lor daha az tuzlu çıktı. Sonuç yine de hafif ve dengeliydi, çocuklar hiç şikayet etmedi.
