Mosul-style kofta is a spicy kebab from northern Iraq, made by quickly grilling spiced ground beef over charcoal. Folding in leftover cooked bulgur keeps the meat moist and makes the plate more filling.

Shape the rested mixture into long oval kofta and thread them onto skewers.
Grill the kofta over hot charcoal, turning every 4 minutes, until cooked on all sides.
