Knead the filling

Knead the mashed chickpeas and fine bulgur thoroughly with finely chopped onion, tomato paste, olive oil, parsley, cumin, and salt.

Rest and shape

Let the mixture rest for 10 minutes so the bulgur absorbs the moisture, then shape into small patties.

Arrange on a baking tray

Arrange the patties on a baking sheet lined with parchment paper and drizzle a little olive oil over them.

Bake in the oven

Bake in a preheated oven until the patties turn golden brown.

Reminder

Important: While kneading the mixture, let it rest for a few minutes so the bulgur fully absorbs the water, or the meatballs may fall apart. Caution: Before greasing the baking tray, make sure the underside of the meatballs isn't sticking. Allergens: bulgur is wheat-based and contains gluten.
