A treat Uzbek children love at holiday and picnic tables, boortsog is made by cutting yeasted dough into diamond shapes and frying it until puffed. Cutting the pieces to an even size and frying them together is essential for even browning.

How to make it?

Dissolve the yeast

Dissolve the yeast and sugar in the lukewarm milk.

Knead and rest the dough

45 min

Add the flour, salt, egg and melted butter, knead, then cover and let rise for 45 minutes.

Cut the dough

20 min

Roll the dough thin and cut into small diamond-shaped pieces.

Fry

10 min

Fry the pieces in hot olive oil for 10 minutes until golden.

Drain and serve

5 min

Drain on paper towel to remove excess oil and serve warm.
