A soft, sugar-free baby pudding made with rice flour. It's a light and filling snack or dessert alternative for babies transitioning to dairy from the eighth month onward.

Prepare the mixture

Set aside a small amount of the milk and mash the rice flour into it until no lumps remain.

Cook

Heat the remaining milk in a pot, add the mashed mixture, and cook over low heat, stirring constantly, until it thickens. Remove from the stove once it coats the back of a spoon.

Warm and serve

Transfer the pudding to a bowl and let it cool to warm. If desired, add a spoonful of fruit puree on top and serve warm to your baby.

Reminder

Important: No sugar is added to this recipe. Cow's milk should only be given to babies who are at least one year old; for younger babies, use breast milk or follow-on formula. Introduce new foods one at a time and watch for signs of allergy; consult your doctor about your baby's diet. Consume the muhallebi the same day.

Mashing the rice flour with a little cold milk before adding it prevents lumps. For natural sweetness, you can add a bit of fruit puree at the end of cooking.
