A whole-grain Iraqi baby food, freekeh porridge is made by simmering roasted green wheat in plenty of water for a long time until the grains break down, then blending it smooth. The fibre in freekeh digests more slowly than rice, offering a more filling meal.

How to make it?

Rinse the freekeh

Rinse the freekeh thoroughly and drain it, skimming off any floating husk fragments.

Simmer

Put the freekeh in a pot with the water and grated carrot, and simmer over low heat, stirring often, for 25 minutes until the grains soften.

Blend smooth

Blend the mixture with the olive oil until it reaches a smoothness suited to your baby's age.

Cool and serve

Let the porridge cool to warm before serving.

Reminder

Always blend the freekeh completely smooth before serving to your baby; any unblended grain is a choking risk. Do not add salt or sugar before the age of one.
