Labneh, a fixture of Saudi breakfast tables, is rolled here into thin cucumber ribbons without any cooking, making it a shape children enjoy eating. The minty labneh filling results in a fresh, low-carb breakfast bite.

How to make it?

Slice the cucumbers

Slice the cucumbers lengthwise into thin long ribbons using a mandoline, then lightly pat away their moisture with paper towel.

Prepare the labneh filling

Mix the labneh with the mint, olive oil, lemon juice and salt until smooth.

Roll

20 min

Place a teaspoon of the labneh filling at one end of each cucumber ribbon and roll tightly, securing with a toothpick so it doesn't unravel.

Plate and serve

5 min

Arrange the rolled cucumbers on a plate, sprinkle with sesame seeds and serve right away.

Reminder

Do not roll the cucumber ribbons before patting away their moisture with paper towel, or the filling will slip and the roll will unravel. Allergens: contains milk and dairy (labneh) and sesame.

Salatalıkları 2 milimetre kalınlığında kesince sarmak çok daha kolay oldu, kalın kesince harç dışarı taşıyordu. 20 dakikalık sarma süresi bende tam tuttu, dört çocuk için yeterliydi.

Kızım tabakta salatalık görünce yüz buruşturdu ama rulo haline gelince hepsini yedi. Nane yerine dereotu denedim, o da çok hoştu.
