Vietnam's refreshing street drink trà tắc is made by balancing brewed black tea with muddled kumquats and a little sugar, served over plenty of ice. With the sugar cut back, this version is ideal for anyone after a refreshing but low-calorie drink.
Brew the black tea with the boiling water and let it steep for 10 minutes, then strain.
Lightly muddle the halved kumquats, peel and all, in a glass for 3 minutes so the peel's bittersweet oils mix into the tea.
Stir the brewed tea together with the muddled kumquat and granulated sugar for 2 minutes.
Pour the mixture over plenty of ice and serve.
While muddling the kumquats, press the peel lightly too — that bittersweet, fragrant note is trà tắc's signature; muddle too hard and the bitterness can take over.
