Made by quickly pressure-cooking carrot, potato and zucchini with red lentils, this purée splits in two: an unsalted baby food and an olive-oil family breakfast. Getting both textures right in a single cook takes skill.
Dice the carrot, potato, zucchini and onion into small cubes.
Put the vegetables, lentils and water in the pressure cooker and seal the lid. Once it reaches pressure, cook for 12 minutes.
Release the pressure and blend the mixture until smooth.
Set aside the baby portion unsalted, then stir the olive oil into the remaining portion.
Don't add salt or olive oil before setting the baby portion aside; salt has no place in baby food preparation.
