A staple of Ukrainian and neighbouring Slavic tables, navy-style pasta is made by folding browned ground beef through boiled pasta. In this version the beef is boosted with red pepper flakes and chili, giving the classic dish a spicy twist.
Boil the short pasta in salted water according to the package instructions, drain, and set aside a spoonful of the cooking water.
Soften the onion in butter, add the beef and cook until its liquid is released and reabsorbed. Stir in the tomato paste, red pepper flakes, chopped chili and salt, and cook for 4 more minutes.
Toss the drained pasta with the beef mixture, adding the reserved cooking water if it looks dry, and serve hot.
Do not fold the beef into the pasta before its liquid has cooked off and thickened, or the mixture stays watery. Leaving the chili seeds in makes the dish far spicier than expected. Allergens: contains wheat (gluten) and dairy (butter).
