Brewed from sideritis herb gathered on Greece's mountain slopes, this traditional infusion is easy to prepare in a large batch and freeze for later. Served unsweetened it suits diabetic diets, and it works equally well hot or iced for a crowd.
Bring the water to a boil in a wide pot.
Add the dried mountain tea herb to the boiling water, lower the heat and simmer gently for 3 minutes.
Turn off the heat, cover the pot and let it steep for 15 minutes; steeping longer will make the tea bitter.
Strain the tea into cups and sweeten with honey and a lemon slice if you like; let any extra tea cool to room temperature before freezing it in ice cube trays.
If you steep the herb longer than 15 minutes the tea turns bitter, so do not extend the time. Freeze any extra tea in ice cube trays and refresh it with hot water whenever you like.
If you cannot find sideritis, a mix of dried linden and thyme gives a similar aroma; in that case cut the steeping time to 10 minutes so the flavour does not turn heavy.
