Black tea simmered with cardamom, cinnamon and ginger meets coconut milk and saffron in this drink, inspired by the spiced tea tradition of Iraqi kitchens. With no dairy and no added sweetener, it suits dairy-free and ketogenic diets.
Simmer the water with the cardamom, cinnamon stick and ginger, covered, for 15 minutes.
Add the black tea to the simmering spiced water, take it off the heat and let it steep, covered, for 10 minutes.
Strain the steeped tea back into the pot, add the coconut milk and saffron and simmer over low heat for another 35 minutes until it thickens; then remove from the heat.
Divide the tea between glasses; if you use a thermos it will stay hot in a lunchbox.
Keep the pot covered while the spices simmer, or the aroma escapes with the steam. Keep the heat low once you add the coconut milk; if it boils hard the fat can separate and spoil the look of the drink.
Crush the saffron threads in a few drops of hot water a few minutes before using it; the colour comes out much more vivid that way.
