Zharkoye is a hearty Ukrainian stew made by slow-cooking beef cubes with potato, carrot and onion over low heat. Being easy to carry in a jar or lidded container makes it a good option for outdoor gatherings.

How to make it?

Sear the beef

Sear the beef cubes over high heat for 8 minutes until browned on all sides.

Add the vegetables

Add the onion and cook for 5 minutes, then add the potato, carrot and bay leaf with a little water.

Simmer

22 min

Cook the stew covered over low heat for 22 minutes until the vegetables are tender.

Reminder

Sear the meat over high heat first, or unseared meat will release its juices early and turn tough. Remove the bay leaf before serving. No nuts are used, so this dish contains none.
