Zilzil Tibs is a technical Ethiopian dish made by slicing beef tenderloin into paper-thin strips, tossing with freshly toasted spices and searing quickly over high heat. Cutting the strips to an even thinness is what determines whether the centre cooks through without staying raw.

How to make it?

Toast the spices

Toast the ground red pepper in a dry pan for 2 minutes until fragrant.

Slice the beef

15 min

Cut the beef tenderloin into paper-thin strips.

Sear over high heat

5 min

Melt the butter in a very hot pan and quickly sear the beef strips with the red onion, toasted pepper and ginger for 5 minutes.

Reminder

Cut the strips paper-thin, or thicker pieces will stay raw in the middle. Get the pan very hot first; a pan that is not hot enough will steam the meat instead of searing it. Allergens: contains milk and dairy (butter).
