Gluten is a protein network in wheat and certain other grains that, when kneaded with water, stretches and gives dough its structure. It allows bread to rise and pasta to stay firm. Since too much of it toughens dough, it is worked less in cakes and pastries.
Where It's Used
“Knead the bread dough until the gluten develops and it becomes elastic.”
