Fillet

The soft, lengthwise-cut portion of meat or fish that has been separated from the bone and skin. For fish it means a boneless fillet; for red meat it refers to the most tender muscle on the inner side of the back (the tenderloin family).

Where It's Used

“Fillet the sea bass and sear it with the skin facing up.”
