Leftover apple, grapes and pomegranate steep in a lemony syrup to make this tangy sherbet, cutting down on waste while adding a colourful drink to party tables. As the warm syrup cools with the fresh fruit in it, the fruit releases its own sweetness into the water.

How to make it?

Prepare the fruit

Dice the apples, halve the grapes and separate the pomegranate seeds.

Boil the syrup

Boil the sugar with the water in a pan and, once boiling, continue for 5 more minutes before stirring in the lemon juice.

Add the fruit and let it steep

15 min

Add the prepared fruit to the hot syrup, remove from the heat and let it steep for 15 minutes.

Chill and serve

5 min

Strain the sherbet into ice-filled glasses, garnish with mint leaves and serve right away.

Reminder

Stay by the pan while the syrup boils, as it can foam up and boil over once the sugar melts. The riper the fruit you use, the sweeter the sherbet, and you can adjust the tartness with the amount of lemon juice.
