Indonesia's traditional ginger tea, wedang jahe bakar, is normally brewed with fire-charred ginger; this recipe makes it easy to prepare at home by charring the ginger in an airfryer. Enriched with cinnamon and cloves, this spiced drink is a cold-evening favourite.

Lightly crush the charred ginger with a mallet.
Boil the crushed ginger with the water, cinnamon and cloves, then let it steep for 10 minutes.

Don't wait for the ginger's skin to blacken completely while charring; a lightly spotted look is enough, as over-charring can leave a bitter taste.
