A traditional clay-pot coffee from Mexico, café de olla is made by simmering water with cinnamon, cloves and orange peel, adding coarsely ground coffee, and straining it twice. Getting the right spice balance and a clear strain takes practice.
Boil the water with the cinnamon stick, cloves and orange peel.
Lower the heat and let the spices infuse over low heat for 20 minutes.
Add the coarsely ground coffee and cook for 5 more minutes without letting it boil.
Remove from the heat and let it rest for 10 minutes so the grounds settle to the bottom.
Strain the mixture through a fine sieve twice to make it clear.
Stir in the erythritol and serve hot.
Don't let it boil after adding the coffee, or it will turn bitter and leave more sediment.
You can also use a small amount of stevia instead of erythritol to sweeten it; it will not affect the low-carb profile.
