A simple breakfast cake from Brazilian baking, bolo de fubá is made by mixing fine cornmeal with egg and milk before baking. A touch of coconut sweetness rounds out the cake's moist texture.

How to make it?

Make the batter

Whisk the eggs, sugar and vegetable oil together, then add the milk and keep mixing.

Add the dry ingredients

Add the cornmeal, flour, coconut, baking powder and salt and mix until smooth.

Bake

40 min

Pour the batter into a greased tin and bake in an oven preheated to 180°C for forty minutes, until a toothpick comes out clean.

Reminder

Test with a toothpick before removing it from the tin; cornmeal can look done on the surface while still holding moisture inside. Allergens: contains gluten (flour), dairy (milk) and egg.

If you do not like coconut, you can leave it out; the cake's texture stays moist and light thanks to the fine cornmeal regardless.

Tarifte 40 dakika yazıyordu ama fırınım güçlü olduğundan 32 dakikada kürdan temiz çıktı, birkaç dakika daha bekleseydim kenarları yanabilirdi. Fırın gücüne göre erken kontrol etmek gerekiyor.
