The symbol of Cuban espresso culture, café cubano is made by whipping the first drops of brewed coffee with sugar into a foamy cream (espumita) and folding it into the rest of the coffee. Intense and sweet, this coffee is a strong drink ready in minutes.

How to make it?

Brew the coffee

Brew the coffee with the water in a moka pot or espresso maker, setting the first strong drops aside in a separate cup.

Whip the sugar

Whip the reserved strong coffee together with the sugar quickly until it turns pale and foamy.

Serve

Fold the foamy mixture into the remaining coffee, divide among small cups and serve.

Reminder

Whip the sugar only with the first strong drops of coffee; whipping it with thinner coffee won't create foam and just leaves flat sweetness.

Moka potum olmadığı için filtre kahve makinesiyle demledim, ilk damlayan kısmı ayırmak biraz daha zor oldu ama yine de köpük tutturmayı başardım. Sonuç tarifte anlatıldığı kadar yoğun ve tatlıydı.
