This classic cake is made by folding crushed walnuts into a soft batter and baking it into slices. It fits comfortably at the breakfast table, in a lunchbox, or alongside afternoon tea.

Slowly add the olive oil and mix.
Add the flour, baking powder and crushed walnuts and mix until you have a smooth batter.
Pour the batter into a tin and bake in an oven preheated to 175°C for forty minutes, until a skewer comes out clean.
Do not remove it from the tin right after baking; letting it rest for ten minutes prevents it from crumbling. Allergens: contains gluten (flour), egg and tree nuts (walnut).
Hazelnuts can also be used instead of walnuts; you just need a slightly shorter grinding time.
