Put the rice and water in a pot and bring to the boil, then simmer over low heat, stirring occasionally, for 60 minutes.
Once the porridge is thick, scoop out a portion for the baby into a separate bowl, keeping it unsalted and unspiced.
Stir the ginger and spring onion into the remaining porridge and serve hot.
Don't skip the stirring; porridge that starts sticking to the bottom will taint the whole pot with a burnt smell.
Adding ginger and spring onion to the family portion right before serving noticeably brightens the flavour; add it only after setting the baby portion aside.
