Hong Dou Tang is a warm Chinese sweet drink made by simmering red beans and dried longan with cinnamon, then sweetening it with rock sugar. The longan's faint honeyed aroma balances the earthy flavour of the beans, adding depth to the drink.
Drain and rinse the red beans.
Bring the water, cinnamon stick and dried longan to a boil, then simmer over low heat for 8 minutes.
Add the red beans and simmer for 10 more minutes; the mixture should thicken slightly.
Stir in the rock sugar until dissolved, remove the cinnamon stick, and serve warm.
Stir the red beans gently without mashing them, or the drink will turn cloudy. Add the rock sugar at the very end — adding it too early can slow down how quickly the beans soften.
If you cannot find dried longan, dried apricot gives a similar sweetness and texture; the aroma will be a bit different but the drink still stays balanced.
