Inspired by England's warming winter drinks, this recipe simmers pear with cloves and a cinnamon stick in a pressure cooker for a fast infusion. Served hot, it leaves a light, sweetly spiced note that warms up a winter evening.

How to make it?

Cook in the pressure cooker

Put the pear pieces, cloves, cinnamon stick and water in the pressure cooker, close the lid and cook under pressure for 15 minutes.

Release the pressure

Remove from the heat and let the pressure release completely on its own before opening the lid.

Strain

Strain the mixture through a fine sieve to separate the spices and pear pulp.

Sweeten and serve

Warm the strained liquid, stir in the honey and lemon juice, and pour into hot glasses.

Reminder

Do not open the lid before the pressure has released on its own, or hot steam and liquid can spray out.
