Soak the Dried Fruit in Tea

This cake from Irish home cooking, associated with winter celebrations, is made by soaking raisins and dried apricots in brewed tea overnight, then folding them into a flour batter the next day and baking it. The tea-soaked fruit leaves the cake with a moist texture.
Put the raisins and chopped dried apricots in a bowl with the brewed tea, cover and leave to soak overnight, for at least 8 hours.
The next day, add the flour, brown sugar, egg, baking powder and cinnamon to the tea-soaked fruit and mix until smooth.
Pour the batter into a greased cake tin.
Bake in an oven preheated to 170°C for 60 minutes, until a skewer comes out clean.
Important: soak the dried fruit in the tea for at least 8 hours, or it won't soften and absorb enough liquid, leaving the cake dry. Allergens: contains gluten (flour) and egg.
You can also try this with another dried fruit you have on hand instead of apricots; what matters is that the fruit fully absorbs the tea overnight.
