Egg, sugar and a little flour are steamed together to make ji dan gao, the light, springy sponge cake of Chinese cuisine. Its oil-free content makes it a light breakfast or between-meal treat.

How to make it?

Whisk the Eggs

Whisk the eggs and sugar in a bowl for 8 minutes until foamy.

Fold in the Flour

7 min

Add the flour and baking powder a little at a time, folding gently.

Steam

20 min

Pour the batter into a mould and steam for 20 minutes.

Reminder

Keep whisking the eggs until the volume at least doubles; the cake's lightness depends on this. Allergens: contains gluten (flour), egg.

If you do not have a steamer, you can improvise with a wide pot of water and a colander to hold the mould above it.

Kekin buharda pişme süresi 20 dakika yeterli mi yoksa ortası hala sulu kalabilir mi? Yumurta köpüğünün kıvamı harika bir hafiflik kattı, herkes bir dilim daha istedi.

Normal un yerine pirinç unu kullandım, kek biraz daha yoğun bir dokuda çıktı ama lezzeti güzeldi. Buharda pişirmek fırına göre çok daha nemli bir sonuç verdi.
