Buckwheat, a staple grain of Ukrainian cooking, is blended with minced chicken breast and kashar cheese and air-fried into crisp bites. The recipe travels well cold in a lunchbox and has a texture kids enjoy.

How to make it?

Boil the buckwheat

Boil the buckwheat groats in salted water until tender, drain and let cool completely.

Mix the filling

10 min

Combine the cooled buckwheat with the minced chicken, grated kashar, egg, breadcrumbs, onion, dill, salt and pepper and knead well.

Shape and chill

15 min

Roll walnut-sized balls from the mixture and chill for 15 minutes; unchilled balls may fall apart in the air fryer.

Air-fry

18 min

Arrange the balls with space between them in the air-fryer basket and cook, turning once halfway, until golden and cooked through.

Reminder

Do not add the buckwheat to the mixture while hot; if it is not lukewarm or cold, the balls fall apart in the air fryer. Allergens: contains wheat (breadcrumbs, gluten), milk and dairy (kashar) and egg.

If you cannot find kashar, white curd cheese works too; the mixture stays a little softer, so chill it for an extra 10 minutes before shaping.

Kaşar bulamadığım için harcı beyaz peynirle yaptım, tadı daha hafif çıktı ama toplar biraz daha yumuşak kaldı. Airfryer'da 18 dakika pişirdim, kızarması yeterliydi. Karabuğdayı önceden haşlayıp soğutmayı unutmayın, sıcak eklerseniz harç dağılıyor.
