Blend the boiled apricots together with their liquid until smooth.
Pass the mixture through a fine sieve to remove the skin pieces, then add the sugar and, if desired, lemon juice, and stir.
Chill the apricot juice in the refrigerator and serve with plenty of ice.
Note: You don't need to peel the apricots before removing the pits; after blanching, the skin comes off on its own when strained.
If you add a few drops of lemon juice to apricot juice, it preserves the color and balances the flavor as well.
