Kayseri hurması, made by shaping yeast-risen dough into date shapes, frying it in hot oil, and then soaking it in syrup, is one of the distinctive desserts of Kayseri cuisine. With its light interior and syrupy exterior, it's enjoyed with pleasure.
Add the fresh yeast and sugar to the warm water, cover, and let sit for 10 minutes.
Add the flour and salt, knead into a soft dough, cover, and let rise for 20 minutes.
Boil the sugar and water, add the lemon juice, boil for another 5 minutes, then set aside to cool.
Pinch off pieces of dough and shape into date-like ovals, then fry in hot oil until golden brown.
Dip the hot fried sweets into the cold syrup and let them soak thoroughly.
Important: Dip the fried sweets in cold syrup while they're hot, or in hot syrup once they've cooled, or they won't absorb the syrup fully. Allergens: contains wheat (gluten).
Adding a few drops of lemon juice to the syrup keeps the dessert from crystallizing and preserves its freshness.
