Developed by steppe nomads to pack both hydration and energy into a single bowl, this tea blends strongly brewed black tea with hot milk, butter and a pinch of salt. It isn't sweet but savoury-balanced, so it can taste unfamiliar on a first try.

How to make it?

Brew the tea

Bring the water to a boil, add the black tea and let it steep for 10 minutes until strongly brewed.

Combine with milk

Strain the brewed tea into a wide pan and add the milk.

Heat and finish

Heat gently over low heat for 10 minutes without boiling, then stir in the butter and salt until melted.

Serve

Ladle the hot milk tea into bowls and serve immediately.

Reminder

Don't let the milk tea boil — if it does, the milk can split and spoil the look. Add the salt gradually, tasting as you go; too much makes the drink undrinkable. Allergens: contains milk and dairy.

Using cream instead of butter gives the drink a lighter, less rich body; cut the salt slightly to compensate, since cream carries less of butter's saltiness.

Çayı tarifte yazdığı gibi 10 dakika demledim, ama tuzu bir tutam değil de gözle biraz fazla kaçırdım, içecek beklediğimden tuzlu oldu ve tadı bastırdı. Bir dahaki sefere çeyrek çay kaşığıyla ölçerek ekleyeceğim.
