Pineapple peel, normally thrown away, steeps for a long time with cinnamon to make this tangy drink, one of Cuban cuisine's traditional waste-cutting sherbets. Free of meat and friendly to fish, it also suits anyone eating pescatarian.

How to make it?

Prepare the peel

Wash the pineapple peel well and cut it into large pieces.

Boil it

15 min

Boil the peel with the cinnamon stick, sugar and water, then keep boiling for 15 minutes.

Let it steep

60 min

Cover the mixture off the heat and let it steep at room temperature for 60 minutes.

Strain and serve

5 min

Strain the drink, stir in the lemon juice and serve cold or over ice.

Reminder

Wash the pineapple peel thoroughly to make sure no dirt is left on it. The longer the drink steeps, the more pronounced its aroma becomes, so do not rush it.
