Inspired by Cuban cuisine's love of tropical fruit, this cake mashes overripe leftover bananas into a soft batter. It is a practical dessert solution that puts bananas otherwise headed for the bin to good use.

Step by Step

How to make it?

1

Mash the bananas

5 min

Mash the ripe bananas with a fork until smooth.

2

Make the wet mixture

5 min

Add the eggs, brown sugar and olive oil to the mashed bananas and mix.

3

Add the dry ingredients

5 min

Add the flour and baking powder and mix until you have a smooth batter.

4

Bake

45 min

Pour the batter into a tin and bake in an oven preheated to 170°C for forty-five minutes, until a skewer comes out clean.

Reminder

The riper the bananas, the moister the cake turns out; choose ones with spotted skins. Allergens: contains gluten (flour) and egg.

Editor's Note Editörün Notu

If you want to sprinkle cinnamon on top, you can add it right before baking for a more pronounced aroma.
