Panetela, Cuban cuisine's plain sponge cake, is made by whipping eggs and sugar until doubled in volume and gently folding in the flour. Folding without knocking out the air is the key to keeping the cake light and spongy.

Gently fold in the flour, baking powder and vanilla without knocking out the air.

Pour into the tin

Pour the batter into a greased tin.

Bake

Bake in a preheated oven for 15 minutes.

Reminder

Never stir the flour in quickly; fast mixing knocks out the whipped air and makes the cake turn rubbery. Allergens: contains wheat (gluten) and egg.
