Pastéis de nata is Portugal's iconic tart, made by lining small moulds with puff pastry, filling them with an egg yolk custard and baking at very high heat until the tops develop dark speckles. Keeping the custard from splitting while preserving the pastry's layers are two delicate processes to manage at once. Their small size means they pack easily into a lunchbox.
Roll the puff pastry thin and press it into small tart moulds.
Mix the cornflour with the milk and heat in a pot, whisk in the egg yolks and caster sugar and cook, stirring constantly, until thickened, then stir in the butter.
Divide the custard among the lined moulds, filling each two-thirds full.
Bake the tarts in the preheated oven at very high heat for 15 minutes until the tops develop dark speckles.
Keep stirring the custard after removing it from the heat; left standing, it forms a skin on top and loses its smoothness. Allergens: contains gluten (pastry), milk and dairy (milk, butter) and egg.
Adding a cinnamon stick to the custard gives it the faintly spiced note typical of Lisbon bakeries.
