A centrepiece of Novruz holiday tables, paxlava is an Azerbaijani pastry of thin phyllo layers filled with crushed walnuts and soaked in saffron syrup, cut into distinctive diamond shapes. Each diamond is traditionally topped with a single hazelnut half.
Boil the sugar with water in a pot, add the saffron, simmer for 10 minutes, then remove from heat and let cool.
Mix the crushed walnuts, sugar and cardamom together to make the filling.
Layer five sheets of phyllo in a greased baking tray, brushing melted butter between each. Spread the walnut filling evenly, then top with the remaining buttered sheets.
Cut the top into diamond shapes and place a hazelnut half on each. Bake in an oven preheated to 170°C for 45 minutes until golden.
Slowly pour the cooled syrup over the hot paxlava straight from the oven, then let it rest for 20 minutes to absorb.
Cut the diamond shapes before baking, not after, or the syrup won't soak evenly between the layers. Allergens: contains wheat (gluten), milk and dairy, tree nuts (walnut, hazelnut).
If you cannot find saffron, a few drops of orange blossom water give a similar aroma to the syrup, though the colour will not be as golden.
