Slowly pour the sahlep paste into the boiling milk and cook over low heat, whisking constantly, until it thickens. Caution: if you stop stirring, it may stick to the bottom.
Divide the hot sahlep among bowls, sprinkle cinnamon on top, and serve immediately.
