Made for a baby's first birthday smash, this cake uses a no-added-sugar batter that's steamed in a pressure cooker instead of baked. Banana and apple provide the sweetness, and skipping the oven means no extra heat in the kitchen.

Pour the batter into a small greased cake tin and cover it tightly with foil; if steam gets in, the cake turns soggy.
Place the tin on a small rack inside the pressure cooker so it doesn't touch the base. Add 2 cups of water to the pot and steam over low heat for 40 minutes without closing the pressure lid.
Turn the cake out of the tin and let it cool completely; once cool, slice it for the baby or freeze any leftover slices.
Don't fully close the pressure cooker's lid while the cake steams — trapped steam will leave it too wet. Allergens: contains egg.
Using pear purée instead of banana gives a milder sweetness; in that case I'd suggest adding a pinch more cinnamon.
