Mash the bananas

Mash the ripe bananas in a bowl with a fork until smooth.

Add the oats and optional currants and mix. Letting it rest for ten minutes allows the oats to absorb moisture, making the dough easier to shape.

Shape and bake

Scoop portions of the mixture with a spoon and arrange as flat mounds on a tray lined with parchment paper. Bake in an oven preheated to 180 degrees for about eighteen minutes, until the edges turn golden.

Reminder

The banana needs to be ripe; the riper it is, the sweeter the cookies will be and the less sugar you'll need. Oats may contain gluten or have cross-contact with gluten-containing products; if you have celiac sensitivity, choose certified gluten-free oats. Cookies stay fresh for two days in a covered container.
